Uchino Chicken Farm is located in a lush green satoyama landscape in Iizuka City, Fukuoka Prefecture. The Uchino Tamago brand was created to provide “healthy eggs” from parent birds raised stress-free here. Currently, in addition to the JR Hakata Station, there are stores in key transportation hubs such as near Haneda Airport in Tokyo and in Hankyu Sanbangai in Umeda, Osaka, which are open in the morning and offer egg-based rice (TKG) using healthy, fresh, raw eggs.

Uchino Tamago Chokubaijo is located in the shopping floor “Ming” in JR Hakata Station. It was quite difficult for me to find the store because of the huge shopping area. I probably spent about 15 minutes wandering around the area. Well, I am willing to go through that effort for a delicious TKG, but please refer to the floor map below when you go to the store. This shows that it’s surprisingly easy to get there from the station’s ticket gate…
Well, I arrived at the store at around 8:30 AM on a weekday morning, and it was full of businessmen in suits. The restaurant has the atmosphere of a small teishoku-ya, with five counter seats and six tables for two. From 8:00 to 10:00 a.m., the menu offers only “breakfast” as a single choice, so when you sit down, your rice is brought to you without saying a word. What is the breakfast of egg on rice (TKG) at our uchi no Tamago Chokubaijo, to be frank?
Let me introduce you to the breakfast I ordered at our Uchino Tamago Chokubaijo. Here is the image…
Rice, miso soup, one raw egg, and oshinko (pickled vegetables) for 550 yen including tax. I wish they would make the price one coin including tax, but it is still a very nice breakfast for this price.
This is what the egg looks like when cracked open. The egg is about the same size as the famous “Kuritama” eggs from Tankuma, a famous restaurant in Hyogo… The white part of the egg is very firm and you can tell that the egg is very fresh.
There are two kinds of soy sauces used to flavor the raw eggs: one is dashi (soup stock) for tamagokake gohan (TKG), which is made from kombu (kelp) dashi, and the other is fish sauce, labeled “isiru dashi” (note: “ishiru” is a traditional fermented seasoning from the Noto Peninsula, where sardines and squid are fermented slowly for over a year). …So this time, I decided to make TKG using this iriru dashi.
A little bit of fish sauce, a beaten egg, and a dash of white rice…
This is it, this is it. This is Japanese breakfast. It would be perfect if there were horse mackerels on top, but just the sight of this TKG is enough to make any Japanese person’s heart warm and happy, don’t you think?
When I actually tried it…TKG with ishiru dashi broth is great! It tastes a little like squid guts, but not so much that it smells bad. If you don’t mind the flavor, you can enjoy the soft, sweet and gentle taste of the TKG. The rice is not sticky, and each grain of rice is firm, so the egg liquid permeates the space between the rice grains, providing a perfect coating of flavor. The miso soup is also lightly seasoned and has a homemade feel to it, and overall, the quality is well worth the 550 yen.
One thing that bothers me, however, is that Nakau is very strong when it comes to TKG breakfast in central city area. A breakfast set meal with almost the same contents (with the addition of grilled seaweed at Nakau) is priced at 290 yen (tax included) at Nakau. That’s almost half the price. The freshness of the eggs and other ingredients are not inferior, and Nakau is by far the more convenient option. However, when compared to Nakau’s breakfast set menus, it is hard to say that they have no chance of winning, but to be honest, they are quite inferior to the other restaurants we have visited.
If they had a unique offer such as “unlimited use of raw eggs” like the other TKG specialty restaurants I have visited, I would probably say, “This is the one I want, not Nakau. At Uchino Tamago Chokubaijo, you have to pay extra for more rice and eggs, so I think it would be more economical to order a breakfast set meal for two at Nakau….

Since the products are made with eggs from hens that have been raised on natural feed in the great outdoors, they not only taste great, but are also safe for small children to eat.
