Hanikamuの銀鱈炭火焼き

Hanikamu

2026年7月3日 by 大堀 僚介

I saw a post on social media saying there was a line forming early in the morning at a place called Hanikamu in Kobe… I was curious about what kind of place it was, so I decided to check it out. They only serve one breakfast item on the menu, but I heard that all the ingredients used in that breakfast come from famous shops in the Sannomiya area, so the quality is supposedly quite high.

Sure enough, if you can enjoy a delicious breakfast so close to the station, you’d definitely want to stop by on your way to work or school. That day, I got up early myself, hopped on the train to Sannomiya, and headed there looking forward to Hanikamu’s breakfast…

Thanks to the new queue management system, there’s no need to wait in line anymore! Here’s what the crowd situation looks like at Hanikamu, a popular spot in Kobe…

I visited Hanikamu around 7:30 a.m. on a weekend morning. I’d read online that the lines get incredibly long on weekends, so I headed there prepared for a wait, but there wasn’t a noticeable crowd outside—it was actually pretty quiet.

As you can see here, the shop had introduced a tablet-based queue management system. I don’t think this was there when I checked online information earlier—I suspect it was introduced relatively recently. If you register your LINE ID or email address here, you’ll get a notification when your turn is approaching. This frees you from the stress of standing in line. You can spend your time strolling around town, relaxing at a café, or doing whatever you like.

Well, since I was the first one there that day, I didn’t have to wait around for long and just waited outside. Right at 8:00 a.m. when they opened, I stepped inside the shop, which was filled with the savory aroma of grilling salmon (by the way, there were already over 20 people in line at that point, so there’s no doubt it’s as popular as the online rumors suggest). The seating inside consists of 9 counter seats, plus one table for two and one table for four, for a total of 15 seats. About two-thirds of the customers when I visited were young women, which made me think, “It really is popular with the younger crowd…”

A lavish breakfast limited to 100 servings… Hanikamu’s only menu item: the Pork Miso Soup and Charcoal-Grilled Silver Salmon Set Meal. How did it actually turn out?

So, let me introduce the set meal I ordered at Hanikamu that day—the restaurant’s only menu item: the Pork Miso Soup and Charcoal-Grilled Silver Salmon Set Meal. About 10 minutes after placing my order, the set meal was brought to my table, and this is what it looked like…

In addition to rice cooked in a traditional clay pot, pork miso soup, and charcoal-grilled silver salmon, the set came with a ton of side dishes: chilled tofu, yellowtail sashimi (with sesame sauce), dashimaki tamago (rolled omelet), and mentaiko (spicy cod roe). Plus, you get one free rice refill, and at the end, you can enjoy ochazuke (rice topped with tea) made with Chiran tea. All of this is included in the set, and the price is 1,980 yen (tax included). It might seem a bit pricey for breakfast, but isn’t it still quite appealing?

Now, let’s talk about the star of the show: the charcoal-grilled silver salmon… Not only is it beautifully marbled with fat, but the umami of the salmon, perfectly melded with the sweet marinade, slowly spreads across your tongue. The skin is charred to a golden brown over the charcoal fire, releasing a rich burst of fat in your mouth while the aroma of the charred crust gently wafts up to your nose. Grilled salmon for breakfast is a classic Japanese home-style dish, but this charcoal-grilled version truly stands out in quality, surpassing that standard.

It’s not just the charcoal-grilled silver salmon—the side dishes, like the yellowtail sashimi, are also excellent in both flavor and portion size. The yellowtail fillets are thick and firm, and the dashimaki tamago (rolled omelet) is packed with authentic Japanese dashi flavor… With all of this, I could easily polish off three bowls of rice.

What’s more, the ochazuke (tea-soaked rice) at the end is fantastic too. It’s served with Chiran tea, and it felt like the tea itself was infused with dashi. On top of that, the umami from the salmon and the marinade seeps into the tea… I thoroughly enjoyed every last drop.

Oh, and I can’t forget to mention the other star of the show: the pork miso soup. Well, this version had a small amount of pork, and not much pork flavor had infused into the broth, so “as a pork miso soup,” it might feel a bit lacking. It’s a miso soup packed with vegetables. However, it was lightly seasoned, and instead of pork, the broth had a rich flavor from the vegetables, making it a gentle, comforting choice for breakfast.

So, I took my time and finished Hanikamu’s breakfast menu—the pork miso soup and the charcoal-grilled silver salmon set meal—in about 15 minutes. Personally, I felt the pork miso soup was a bit lacking, but in every other aspect, it really lived up to its reputation as a popular spot. When you can enjoy such a substantial breakfast, doesn’t it make you feel like you’re going to have a great day ahead? You can also order extra salmon roe to turn it into a salmon and roe rice bowl, or get larger portions of other side dishes, so feel free to customize your order and enjoy all the different options.

Only one person per day? Reservations are also available via Tabelog… Hanikamu is a 3-minute walk from Sannomiya Station on the JR Kobe Line, the nearest station.

At Hanikamu, reservations can also be made via Tabelog. However, the only available time slot is 8:00 AM, when the restaurant opens. Also, I wonder if they only accept one reservation per day? However, if you book here, you won’t need to register with the queue management system. You can simply arrive at the shop before 8:00 AM and be the first to be seated, so this is a huge advantage if you’re certain you can arrive at 8:00 sharp. Now, here are the shop details…
