Apparently, there’s a restaurant in Kobe that bills itself as a “spaghetti specialty shop for solo diners”… After hearing that, I searched online and found a place called Chapman in Kosokobe. Since it’s a “spaghetti specialty shop for solo diners,” there should be absolutely no problem for a lone customer like me to go there. Plus, it seems this place has a “super-sized” menu… There’s simply no reason for me not to go. Looking forward to the super-sized pasta, I walked toward Kosoku Kobe, where the restaurant is located, but…

It’s a spaghetti specialty shop, but it’s a down-to-earth neighborhood diner with absolutely no pretensions… Single-serving spaghetti specialty shop Chapman is this kind of place…

With Google Maps in hand, I walked from the Motomachi area toward Kobe Expressway. Once I descended into the underground mall and started walking toward Shinkaichi, I spotted a small shop on my left with a banner reading “Solo Diners Welcome: Spaghetti.” This is my destination for today: Chapman. It seems they originally operated near Ikuta Road in Sannomiya, but moved to their current location in September 2019. They continue to operate out of this cozy shop, which seats about 25 people.

I get the impression that many spaghetti specialty shops go out of their way to have stylish interiors aimed at women, but true to its claim as a “spaghetti specialty shop for solo diners,” Chapman has absolutely none of that forced attempt to appeal to women. The staff’s service is minimal (note: not that it’s bad), and to put it simply, it feels like a place “just to eat.” Despite that somewhat rough-and-tumble vibe, there are actually quite a few young female customers. I found myself thinking, “I wish there were more pasta places like this—the kind of neighborhood diner.”

The Ultimate Quartet of Umami… Chapman’s Famous “Omunapo”—What Was It Like to Try It?

So, let me introduce the famous “Omunapo” I ordered at Chapman this time. The noodle portion can be customized for free between 300 and 600 grams, but since it was my first visit, I played it safe and ordered 500 grams…

After waiting 7–8 minutes from the time I ordered, the 500g Omunapo was brought to my table. At first glance, the portion certainly looks substantial, but it didn’t feel as massive as I’d expected… I based my order on Jiro’s standard 300g serving, so perhaps it just looked smaller because it lacked the soup and vegetables.

Well, putting that aside, let’s get down to eating… The egg is cooked to a fluffy texture, with just a hint of runny yolk remaining. The pasta I pulled out from underneath is thick, and it’s cooked past al dente to a softer consistency. It’s generously topped with a rich tomato sauce that’s been heated to bring out its acidity and sweetness—but since it’s tomato sauce, not ketchup, the flavor feels more like “pasta shop Napolitan” rather than “coffee shop Napolitan.” But with classic ingredients like sausages, bell peppers, and mushrooms scattered throughout the pasta, and the way the tomato sauce fills the mouth as I eat, I think it’s a dish that will definitely evoke a sense of nostalgia for those of the Showa generation…

And the demi-glace sauce drizzled around this Omunapo is just perfect. The tomato flavor of the Napolitan alone is already rich enough, but when this demi-glace sauce is added, it creates a trio of egg, Napolitan, and demi-glace, unleashing a rich umami flavor in the mouth unlike anything I’ve ever experienced. To put it another way…

They also offer all-you-can-sprinkle grated cheese on the table, so you can turn it into a quartet by adding the richness of cheese. This is definitely addictive. I wish this creative pasta dish, like Rarukii’s “Pepe Tama,” would spread across the country… though I have a feeling that if an Italian saw it, they’d say, “This is cheating!”

For those looking to take it to the next level, there’s also a super-sized version… Access to Single-serving spaghetti specialty shop Chapman is just a 1-minute walk from the nearest station, Hanshin Electric Railway’s Kōsoku-Kobe Station.

There are four size options available. While the Mt. Everest option comes with the restriction that you must have “already conquered Mt. Fuji,” the other sizes can be ordered freely. They also offer takeout, so you can bring it home and take on the “mega-portion challenge” there. I think it’s a very convenient spot, so if you get the chance, be sure to give it a try.
