Aji-no-Kaze Nishimura is a Japanese restaurant located in Sakurai city in central Nara prefecture. It seems that not only Nara Prefecture, but also Osaka, Mie, Aichi, etc. have come to visit the restaurant for course meals that are only available for 10 people each day and night.
The 10,000 yen (+ tax) course I ordered this night was a total of 9 dishes, mainly fish dishes. All of them are seasoned well with sake, and the refrigerator under the counter has many large bottles regardless of their name.
Actually, it’s a very difficult place to stay for me. That’s because I have a strict rule that “I don’t drink alcohol when I’m looking for blog material”.

Chawanmushi with salmon roe
Salmon roe topped on top of the bowl with no ingredients. The simplicity is beautiful in appearance and reminds me of the Hinomaru.
Add the salty taste of salmon roe to the thin and elegant broth of teacup steamed for exquisite salting. The contrast between the delicate texture of chawanmushi and the texture of the bubble wrap is also pleasant.
Sesame tofu, matsutake mushroom, and white-haired shrimp soup
The refreshing scent of yuzu that can stand in when you take the vessel gives you a sense of the high quality of the broth. Shrimp and sticky sesame tofu and crisp pine mushrooms … These ingredients are pale in taste, and the soy sauce stock is a bit darker.
Akashi bream and squid
There are two types of squid: raw body part and lightly grilled legs. Sea bream is fastened with kelp. Sea bream’s whiteness changes its texture due to the moisture absorbed by the kelp, and the taste of the kelp has been deepened due to the added umami taste. Grilled mackerel skin savory, cooled at room temperature and sprinkled with sesame ponzu. Sesame ponzu vinegar matched with pale white mackerel is also relatively refreshing, and is a chopstick rest in the middle of the course.
t is covered with grilled eel, but this is a dish that can fully enjoy the thick thighs. The sauce on top is a mixture of Owari soy sauce and ginkgo, and the ginkgo starch melts into the soy sauce, adding a natural thickening.
